THERE is a good deal of poetry in the names the French have chosen for their foods — Du Barry, Richelieu, ravigote, Rachel. One of the most interesting names, coquilles St. Jacques, is applied both to a food — scallops — and to a dish made up of that food. Many people, even among the French, don't know that the name in its beginnings had religious connotations. The word coquille, of course, means shell in French. Starting in the Middle Ages, it was commonly believed that St. James (in French, St. Jacques) was buried in the province of Galicia in northwest Spain. The place of his burial is said to be in Compostela. now indicated on maps as Santiago (St. James) de Compostela.
